250x51 monosteel Gyuto

This is a old trial blade in a steel I didn't end up using often, but the steel is very nice, uddeholm Rigor, at 63-64 hrc.

On this knife I tried some new techniques for making convex tapered grind, but ended up adjusting it slightly and finishing it in my usual way, to be happy with profile and finish. I was very happy with the grind, thicker in the back end and thinner up front, with all around good release.

Blade is 4,5 mm thick by the handle and tapers moderately into a thin tip. Blade forward balanced and total weight is 209 grams.
