Warikomi 210 gyuto

Collaboration with Björn Birgersson.
Björn forges and heat treats these, and I grind and make handles.
Björns forging is very impressive. His waterquenched warikomi laminate is something to experience (66-67 hrc edge).

~210 mm edge and ~52 mm tall at heel.
Forged thinly tapered. Balanced 4-5 cm in on the blade from heel.
~200 g
Convex grind with thin edge (nailflexing, user may need to sharpen it a hair thicker to preference, I make like this because it's much easier for the owner to thicken than to thin a edge)
